Bamboo makes a fantastic green alternative to hardwood. Technically a grass, not a tree, bamboo stalks are extremely versatile; they can be harvested in three years, require minimal fertilization and pesticides, and do not need to be replanted. Comparatively, oak trees take 120 years to grow to maturity and can only be cut after decades of growth. Bamboo can be stained and comes in similar color palette to oak.
